Vineyard and Winemaking

Fruit is sourced exclusively from Moss Wood’s estate vineyard in Wilyabrup, where gravelly loam soils and cooling maritime influences provide ideal conditions for Chardonnay. Hand-harvested grapes were whole-bunch pressed and fermented in French oak barriques using indigenous yeasts. Full malolactic fermentation and extended lees ageing added complexity, texture, and integration. The wine matured in oak, a proportion new, to build structure while maintaining balance and purity.

Aromas of white peach, grapefruit, and lemon curd are layered with notes of roasted cashew, subtle flint, and brioche.
