About This Wine
The Saint & Scholar vineyard is located in the Adelaide Hills, a cool-climate region with hilly, north-facing sites and high rainfall, where free-draining soils and abundant sunlight support consistent ripening.
The 2021 vintage experienced a long, cool growing season with well-timed rainfall and slow ripening, resulting in balanced flavour development.
The fruit was carefully hand harvested, whole-bunch pressed and fermented using wild yeast. The wine was matured in French oak puncheons for eight months, with 50% new oak. This wine is only released in high-quality vintages and bottled in small volumes.
Tasting Notes
Appearance: Pale straw with a bright lemon hue.
Bouquet: Lemon curd, mandarin and nashi pear with hints of shortbread biscuit and custard.
Palate: Medium-bodied with delicate lemon acidity, mandarin, yoghurt and hints of flint, building a rich mid-palate with length.
