Professional Reviews A high-elevation Eden Valley shiraz showing impressive fruit depth and power with rich blackberry and black cherry fruits, tightly packed brown spice notes, sage, earth, licorice and dark liqueur chocolate vibes. Concentrated and sporting a cassis/kirsch-like opulence, tight granitic tannins and perhaps a smidgen of alcohol heat on the finish. Tasting Notes Harvested from Block 41 on the 18th of April on the Estates eastern side. The fruit was harvested in the cool of the night using a selective destemming harvester and cold soaked for 3 days prior to inoculation with 14 days total on skins. Pumped over twice a day throughout fermentation in 5 tonne open fermenters and fermented through to dryness. The wine was then matured in 40% new French oak Puncheons and 60% 1-2-year-old French oak Puncheons for a total of 15 months.
