Lark Rare Seppeltsfield Apera Cask Matured was created exclusively for The Whisky Club as the July 2026 Whisky of the Month.
This is the second release in The Whisky Club x Lark Rare Seppeltsfield series, made in the style of Lark's double-sherried bottlings using only whisky distilled at Lark's original Cambridge site.
The whisky was matured in ancient first-fill Seppeltsfield Apera Sherry casks from the Barossa, including some casks up to 80 years old, with an average cask age of about 50 years.
The cask composition is 75% Oloroso-style, 20% Pedro Ximenez, 4% Amontillado and 1% Fino.
It is non-chill filtered, natural colour, bottled at 49% ABV, and released in 700ml format.
Colour: Cherry wood.
Nose: Caramel fudge and walnut baklava with wafts of orange and clove.
Palate: Plum cake, dried apricot and espresso lead into roasted almonds and vanilla cream.

Lark Distillery was formed in 1992 after Bill Lark helped change the laws that had prevented small-scale whisky distilling in Tasmania.
The distillery is widely associated with the beginning of the modern Australian whisky industry and is known for Australian fortified wine cask maturation, rich fruit-driven style and oily texture.
Lark uses Tasmanian-grown barley, brews its own wash on site, and has official access to a Tasmanian peat bog.
