The 2025 Kostas Rind Chardonnay comes from Bindi’s lower Chardonnay plantings, established in 1988 on volcanic soils over clay. Now in their 35th harvest, these mature vines produce a finely detailed Chardonnay combining freshness, fragrance and mineral drive with texture derived from extended lees ageing. The wine is built for further development, with Bindi suggesting around seven years for it to approach its peak.
The Kostas Rind Chardonnay comes from Bindi’s lower Chardonnay plantings, established in 1988 on volcanic soils over clay in the Macedon Ranges. The vineyard has benefited from more than two decades of dedicated work focused on building humus and microbiological life, contributing to excellent soil and vine health.
Destemmed berries are pressed and the juice is taken directly from the press tray into small French oak barrels, approximately 25% new. Fermentation occurs without yeast addition and the wine remains on all lees for 10 months until just prior to bottling.
Bindi Winegrowers: “This wine is fresh and fragrant and very fine. There are lemon and lime aromas working alongside white flowers, some oak spice and flint and mealiness from lees ageing. Given time, aromas of cashew and almond emerge. The palate is vibrant and racy with lovely texture and grip driving a long, flowing finish. Perhaps seven years are required to see this wine approach its peak where history tells us that it will remain for a decade or so.”
Bindi is a family wine producer in Victoria’s cool Macedon Ranges. Bill and Michael Dhillon established the vineyard in 1988 on the family property near Gisborne, focusing on Pinot Noir and Chardonnay. The vineyards are managed with a hands-on philosophy encompassing hand pruning, intensive canopy management and hand harvesting. Since 2005, Bindi has implemented organic procedures and inputs focused on promoting soil life, balance and vine health.
Michael Dhillon worked as assistant winemaker to Stuart Anderson from 1991 until assuming full responsibility in 1998. His experience includes vintages in Champagne, Crozes-Hermitage and Tuscany, complemented by extensive study of Burgundy.
