Yarra Yering Chardonnay combines fruit from the estate’s original 1969 plantings with selected Burgundian clonal material. Whole-bunch pressing, natural fermentation and maturation in French oak produce a textured, energetic and cellar-worthy Yarra Valley Chardonnay.
The original Chardonnay block was planted in 1969 from an unidentified clone. Cuttings from these vines were planted in 2000 and contribute 50% of the blend. The remaining 50% comes from Burgundy Clone 95, planted in 2012.
The hand-harvested grapes were chilled overnight before being whole-bunch pressed. Fermentation took place with wild and cultured yeasts in French oak, using a combination of 228L barriques and 500L puncheons, including 30% new oak. Malolactic fermentation was inhibited to preserve natural acidity. The wine matured for 10 months in Yarra Yering’s cool underground cellar before blending and bottling.

The fruit is supported by an extremely fine grained oak tannin framework which lingers on the finish.”
