“Pale pink in appearance. The nose gives delicate aromas of fresh strawberries, chalk, rose petals and blood orange peel. The palate is focused with pure acidity and a generous texture, giving notes of red apples, puff pastry, nectarines and watermelon rind. Nice complexity, with an underlying tension coming from four years on the lees in bottle after being 50% barrel fermented. Tirage of 5 g/L. Drink or hold.”

Producer Notes
Given that this wine will always spend at least four years on lees, the aim at harvest and through winemaking is to build and retain freshness and acidity to balance the creamier, baked-goods notes developed during lees ageing.
A portion of wild fermentation in oak adds depth and complexity, contributing to a lush, candied aromatic profile and a palate that remains light and creamy with soft tannin structure and sustained acidity through a long, rounded finish.
