The fruit was hand-picked from Felton Road's estate vineyard, where organic and biodynamic practices are used to preserve the character of this distinctive Bannockburn site.\u003c\/p\u003e\n\u003ch3\u003eWinemaking\u003c\/h3\u003e\n\u003cp\u003eApproximately 25% whole clusters were retained, with the remainder destemmed directly into fermenters using gravity. After an eight-to-ten-day pre-fermentation soak, the wine fermented with indigenous yeasts and spent 21 to 23 days on skins.
