All grapes were destemmed and crushed into open fermenters, fermenting at temperatures not exceeding 25°C for 10-14 days. The fermenting cap was managed with twice-daily pump overs. Once dry, the wines were bag pressed to tanks for malolactic fermentation (MLF) before being racked to oak. After 3 months of aging on lees, the components were racked, blended, and returned to a mix of French barrels (10% new) and 6.6KL French vats. An additional 12 months of maturation allowed the wine to harmonize and soften before racking, filtering, and bottling.\u003c\/p\u003e\n\u003ch4\u003eTasting Notes\u003c\/h4\u003e\n\u003cp\u003eThe wine exhibits a rich crimson color with purple hues at the rim. We use approximately 30-40% new oak for this wine, with the aim of adding complexity and structure without dominating the fruit flavour. Each year we work closely with the Borrett family to choose the ideal harvest time. Fermentation takes place in our small open vats which are hand plunged to help extract the naturally abundant colour and tannins present in the grapes. After fermentation is complete (typically 10 to 20 days) pressing is done by hand using small manual basket presses and care is taken not to extract too much bitterness or astringency by rough handling and over-pressing.
